Tunde Kabab Recipe



Lucknowi Kebab


















INGREDIENTS FOR MARINATING MINCED MEAT
  1. Half kg minced meat ( mutton keema)
  2. 5-6 green chillies (grinded)
  3. 2 tbsp papaya paste with skin
  4. 1 small onion(grinded)
  5. salt

mix all these ingredients in mince meat and keep it for 2-3 hours at a warm place

INGREDIENTS FOR DRY ROAST MASALA:

  1. 2-5 pcs dry chilly (sukhi lal mirch)
  2. 1 tbsp coriander seeds (sabit dhaniya)
  3. 1 tbsp cumin seeds ( sabit zeera)
  4. 5-6 cloves (laung)
  5. 1 pcs big cardamom (badi elaichi)
  6. 5 pcs small cardamom (chhoti elaichi)
  7. 1 blade mace (javatri)
  8. one fourth piece of nutmeg (jaiphal)
  9. 2 pcs of parmotrema perlatum (patthar k phool).
  10. 1 tbsp poppy seeds (khash khash).
  11. 2tbsp gram flour (besan)
now roast all these ingredients and grinned them.
Your Dry Roast Masala is Ready.

PREPARATION

we need 4 more in ingredients

  1. 1 tbsp Garlic paste
  2. 1 tbsp Ginger
  3. 1 medium chopped and fried Onion.
  4. 1 pc Coal.


  • Now add Ginger and garlic paste, fried Onion, Dry Roast Masala in minced meat .
  • now in a bowl put this masala mixed minced meat and in the centre put a small bowl or a small sheet of foil where we can place a burning coal,
  • press this small bowl or foil and place a burning coal on it and pour 1/2 tsp Ghee on this burning coal, cover the big bowl for 1/2 hr so that minced meat get smoked.
  • now divide this mixture into several portion and make balls and flatten it from centre and shallow fry it on medium flame till brown.

Chicken Nambali


CHICKEN NAMBALI
















Ingredients

  1. Chicken breast 500 grm
  2. Ginger paste 1 tsp
  3. Garlic paste 1 tsp
  4. Turmeric powder 1/2 tsp
  5. Black pepper powder 1/2 tsp
  6. Garam Masala powder 1/2 tsp
  7. Pink sea salt (Lahori Namak, Sendha namak) 1/2 tsp
  8. Mozzarella cheese 1/2 cup
Preparation

Dice chicken in small pieces,
Marinate it with turmeric powder, garam masala powder,
pink sea salt, ginger garlic paste,
black pepper and keep for 1/2 hr.
Now cover with foil and bake it on 180 *C for 25 min.
(bake on grilling part of oven not on the baking part)
after grilling sprinkle it with mozzarella cheese and
grill again until cheese melts and turns brown (approx 3-4 min)
now sprinkle some black pepper and serve.

INGREDIENTS
  1. MUTTON MINCED 1/2 KG
  2. 2 TBSP GRAM FLOUR (BESAN)
  3. 1 TBSP POPPY SEEDS (KHASHKHASH)
  4. 1 TBSP CUMIN SEEDS (ZEERA)
  5. 5-6 PIECES CARDAMON (ILAECHI) 
  6. 4-5 CLOVES (LONG)
  7. 10-15 BLACK PEPPER CORN
  8. 2 TBSP RAW PAPAYA WITH SKIN (KACHCHA PAPITA)
  9. 1 EGG
  10. 2-3 BREAD PIECES
  11. SALT TO TASTE
  12. 1 TBSP RED CHILLY POWDER
  13. 1/2 CUP CHOPPED GREEN CORIANDER (HARA DHANIYA)
  14. 1/2 CUP CHOPPED MINT LEAVES (PODINA)
  15. 4-5 CHOPPED GREEN CHILIES (HARI MIRCH)
  16. 2 MEDIUM CHOPPED ONION (PYAZ) 

PREPARATION

STEP 1

GRIND ALL THE INGREDIENTS FROM 1-6 (FROM ABOVE INGREDIENTS)

STEP 2

NOW CHOP ALL ABOVE INGREDIENTS (FROM 1-16) IN A CHOPPER.

STEP 3

NOW REFRIGERATE THIS MIXTURE FOR 2 HOURS.

STEP 4

AFTER 2 HOURS PUT A HANDFUL OF THIS MIXTURE ON A SKEWER STICK
AND BAKE/ ROAST/ FRY IT UNTIL ITS COOKED WELL.

BRUSH SOME OIL/ BUTTER ON IT AND COOK IT FOR ANOTHER 5 MINUTES. 

SERVE IT WITH SALAD AND GREEN SAUCE (HARI CHATNI).

HARI CHATNI (GREEN SAUCE)


HARI CHATNI:

















INGREDIENTS
  1. Green coriander 1cup chopped
  2. Green chillies 4,5
  3. Garlic 5,6 cloves
  4. Imli (tamarind pulp)2 tbsp
  5. zeera (cumin seeds) half tsp
  6. salt to taste.
PREPARATION
      
      Grind all the above ingredients with 3 tbsp of water to make a fine paste.

CHEESE MUTTON RIBBON PASTA













Cheese mutton ribbon pasta:

INGREDIENTS

Ribbon pasta 1pack
Mutton 400grms
big square chopped onions 2
Salt to taste
Black pepper to taste
Tomato puree 1cup
Oregano 1tbsp
Oil half cup
Cheese 1cup

PREPARATION

Boil ribbon pasta in a vessel add salt and 1tbsp of  oil, cook it till it become soft then strain it in a strainer and wash it with cold water and add 1tsp oil .keep it aside.

Now, in a wok add oil , mince mutton and mix well then add chop onions , salt , pepper , oregano, tomato paste mix it add 1cup of water cover an cook it for 10min on slow gas.
 Now, mix ribbon pasta with this mutton gravy  and add mozzarella cheese mix well and serve hot.

INGREDIENTS (FOR 8 GLASSES)


  • STRAWBERRIES 1 CUP
  • BANANAS 2
  • GUAVA PULP  1 CUP
  • MANGO PULP 1 CUP
  • JUICE SWEETENER 1/2 CUP
  • WATER 2 CUP

METHOD:

PUT ALL ABOVE INGREDIENTS IN A GRINDER JAR AND GRIND FOR TWO MINUTES.

ITS VERY HEALTHY AND EASY WAY TO GET ENOUGH NUTRIENTS FOR ALL DAY LONG.

Coconut Cookies




Ingredients


  1. unsalted butter 250 grm
  2. castor sugar 200 grm
  3. white flour (maida) 350 grm
  4. egg 1
  5. 1/2 cup desiccated coconut
  6. 1/2 tsp vanilla essence
Method 

Mix all the ingredients together , make a soft dough, refrigerate it for one hour .
after one hour cut it in to small pieces and give them shape of cookies ,
 bake it in preheated oven at 180 C for 15 mins.
your cookies are ready to eat.

Achari Chicken

ACHARI CHICKEN   






INGREDIENTS
  1. CHICKEN 1 KG OR 12 PIECES.
  2. YOGURT  1/2 CUP.
  3. OIL 1/2 CUP.
  4. FENUGREEK SEED (METHI DANA) 1/2 TSP
  5. WHOLE DRY CHILLY 2 PCS
  6. ONION 1 SQUARE CHOPPED
  7. GARLIC 1 TBSP CHOPPED
  8. GARLIC PASTE 1 TBSP
  9. GINGER PASTE 1 TBSP
  10. SALT 1 & 1/2 TSP
  11. RED CHILLY PWD 1 TSP
  12. TURMERIC PWD 1/2 TSP
  13. ONION SEEDS (KALAUNJI) 1 TSP
  14. FENNEL SEEDS (SAUNF)1 TSP
  15. GARAM MASALA PWD 1/2 TSP
  16.  ROASTED AND GROUND CUMIN SEEDS
  17. ROASTED AND GROUND CORIANDER SEEDS 1 TBSP
  18. LEMON  JUICE 2 TBSP




 METHOD

  1. MARINADE CHICKEN WITH 1/2 CUP OF YOGURT AND REFRIGERATE IT  FOR HALF AN HOUR.
  2. IN A COOKING PAN ADD OIL AND THEN FENUGREEK SEEDS AND WHOLE RED CHILLY.
  3. NOW ADD CHOPPED ONION AND GARLIC.
  4. NOW ADD GINGER GARLIC PASTE
  5. NOW ADD MARINATED CHICKEN
  6. FRY AND ADD REMAINING 1 CUP YOGURT
  7. NOW ADD SALT,RED CHILLY  PWD AND TURMERIC PWD
  8. COVER AND COOK IT TILL TENDER
  9. NOW ADD ACHAR MASALA (FENUGREEK+ONION SEEDS+ROASTED AND GROUND CORIANDER AND CUMIN SEEDS+FENNEL SEEDS+ GARAM MASALA PWD)
  10. NOW COOK IT FOR 5 MIN.
  11.  NOW GARNISH IT WITH GREEN CHILLY,CHOPPED GINGER ,GREEN CORIANDER AND LEMON JUICE.

 DIGESTIVE BISCUITS (PREFERABLE)


 BUTTER 4 TABLE SPOON



CREAM CHEESE SPREAD 1/2 CUP


WHIPPED CREAM 1 CUP


CHEDDAR CHEESE (OR ANY CHEESE AVAILABLE)200 GR


JELLY (GELATIN POWDER AVAILABLE IN MARKET, MAKE IT ACCORDING TO THE INSTRUCTIONS IN BOX)
(I USED ORANGE GELATIN POWDER, YOU CAN USE ANY COLOR OF YOUR CHOICE)


METHOD OR RECIPE


1- CRUSH 30 BISCUITS AND MAKE POWDER OF IT..










2-MIX THE BISCUIT POWDER WITH MELTED BUTTER.















3- SET THE MIXTURE IN CAKE MOLD PAN.











4- MIX WHIPPED CREAM + CREAM CHEESE SPREAD + CHEDDAR CHEESE












5- PORE MIXTURE OF CREAM AND CHEESE ON BISCUITS














6- REFRIGERATE IT IN FREEZER FOR 6 HRS .

7- DECORATE IT WITH JELLY AND SERVE .











TRY TO SERVE IMMEDIATELY AFTER TAKING OUT OF FRIDGE TO AVOID MELTING.

Chicken Lasagna



Chicken Lasagna













INGREDIENTS : (for 4 serving)

1) Lasagna sheets (9)
2) Red sauce
(tomato paste 2 tbsp +2 pinch oregano + 1 chicken stock cube)
3) White sauce
(fry 2 tbsp of white flour in 2 tbsp of butter and add a cup of milk gradually according to the consistency of sauce and then add salt an pepper)
4) mozzarella cheese 
5) small pieces of fried chicken 

Preparation
* Boil 9 lasagna sheets,
*Layer 3 sheets in baking dish,
* Spread small fried chicken pieces on the layers,
* Cover it with red sauce,
* Spread 3 sheet on red sauce , again add  chicken pieces and red sauce,
* again 3 Lasagna sheets, now spread white sauce and cover with mozzarella cheese and bake it in oven on 200 °c for half an hour.
Lasagna with chicken is ready to eat.

Kaju ki barfi






Ingredients : 

1) 500 grm Cashew nuts







(powdered in grinder)








2) 250 grm Sugar


Recipe:

1) make Chashni (syrup) :
put 250 grm of sugar in a non stick pan and a cup of water,
cook it until become a thick syrup (ek taar ki chashni).










2) mix 200 grm powder of Cashew nuts(Kaju)
 with half of the syrup and keep mixing on low flame for a half minute,











3) then make a dough and flatten it like a chapati.












3) refrigerate it for one hour and then cut it into the pieces to serve !
can decorate it with silver paper.

Rasmalai

Rasmalai












Ingredients:

  • paneer (COTTAGE CHEESE ) made from 1 liter of milk (recipe below)
  • 1 liter full cream/ whole milk
  • 1/2 cup sugar
  • 1 tablespoon cardamom powder
  • 4 cups water
  • 1 cup sugar
  • 1/2 cup thinly sliced almonds or pistachios

Preparation:

  • Mix the water and 1 cup of sugar in a pan and boil till all the sugar is dissolved. Turn off the fire and keep syrup aside.
  • Knead the Paneer in a platter till very smooth. Make into balls slightly smaller than the size of a walnut and flatten slightly in the center.
  • When the Paneer balls are made, reheat the syrup to boiling, then simmer and gently drop in the Paneer balls. Cook for 10 minutes. Turn off fire.
  • In another pan boil the 1 litre of full cream milk with the 1/2 cup of sugar, till reduced/thickened to 75 per cent of its original volume. Turn off the fire, add the cardamom powder and mix well.
  • Add the syrup soaked Paneer balls (after draining) to the milk mixture and chill for a few hours.
  • Before serving, garnish with slivers of dried fruit.

  • HOW TO MAKE PANEER :

Ingredients:

  • 1 litre full-cream milk (use lean milk for a low-fat version)
  • ½ tsp citric acid/lemon juice
  • ½ cup warm water

Preparation:

  • Set the milk up to boil.
  • As the milk is readied, dissolve the citric acid/lemon juice in half a cup of warm water.
  • When the milk comes to a boil, pour the acid-water/lemon juice-water mix into it.
  • Reduce the heat and stir continuously until the milk is completely curdled.
  • Remove from the heat when the separation of the curds and yellowish whey is complete.
  • Strain the mixture through a clean muslin cloth.
  • Hold it under running water for a minute and then press out the excess water.
  • Hang the muslin for 15-20 minutes so that all the whey is drained out.
  • To make the paneer into a block tie the muslin and place it under something heavy.
  • The paneer can now be cut into chunks and used as required.
